"Sharon Eubank's Waltz", variously spelled "Sharon Eubanks's Waltz" or "Sharon Eubanks' Waltz", is an Irish waltz attributed to former member of The Boys of the Lough David Richardson. It was recorded by The Boys Of The Lough on The West of Ireland. I learned it from there. The only online source that I can find is The Session (thesession.org).
